In a letter to Horace Kephart on August 15, 1916, David T. Abercrombie responds to Kephart’s critique of canned milk. Mr. Abercrombie explains this canned milk product meets the purification standards set by the Secretary of Agriculture and contains 27.5% butterfat. The whole milk powder blended with butterfat results in an authentic whole milk product.
